Raw prawns with blue-grey, faintly translucent shells that show the dark banding of the segments beneath. Long rostra and sweeping antennae, heads on and legs on.
They are plump for their size and firm to the touch, which is what you want in a prawn: the flesh stays tight and sweet through cooking instead of going soft. The shells are worth keeping for stock.
