Fresh Whole Raw Tiger Prawns

Raw tiger prawns, whole and heads-on, banded in cream and rust-brown and finished with tail fans that flash blue and orange. Long antennae, spiny legs, and a shell thick enough to hold its shape on the grill.

They are large enough that a few go a long way. The flesh is firm and sweet with a proper bite, and the shells are worth keeping for stock. Split and grill them, steam them with garlic, or barbecue them in the shell.

Keep frozen at -18°C or below. Cook thoroughly before eating.
